HOW TO MAKE PUMPKIN OATMEAL NO-BAKE COOKIES
Begin by bringing the milk, sugar, and butter to a rapid boil on your stovetop.
When the mixture begins a boil that you can’t stir away, set a timer for one minute. Let it boil for that full minute to allow the sugar to fully cook into the butter and milk.
Remove the saucepan from the heat and stir in the dry ingredients until the mixture is fully combined.
Drop spoonfuls of the cookie mixture onto a parchment- or foil-lined baking sheet. You could also drop the cookie dough using a cookie scoop for more uniform cookies. Allow the cookies to cool for 90 minutes.
The no-bake pumpkin cookies will set up into chewy cookies that your family is sure to enjoy!

- medium saucepan
Ingredients
- ½ C of butter
- 2 C of sugar
- ⅔ C of milk
- 1 tsp vanilla
- 4 ½ C quick cook oats
- 1 box of instant pumpkin pudding 3 ounce box
- A pinch of salt
Instructions
- Line your countertop with parchment paper or aluminm foil.
- In a medium saucepan combine butter, sugar, and milk.
- Bring to a rapid boil over medium high heat, stirring cntinuously.
- When the mixture comes to a rapid boil that you cannot stir away, set a timer for 1 minute.
- Allow to boil for one minute.
- Remove the saucepan from heat.
- Stir in vanilla, oats and instant pumpkin pudding until fully combined.
- Drop the cookie mixture onto the parchment lined work area by the spoonful.
- Allow the cookies to cool and set for 90 minutes before removing.
