- Line your countertop with parchment paper or aluminm  foil.  
- In a medium saucepan combine butter, sugar, and milk. 
- Bring to a rapid boil over medium high heat, stirring cntinuously. 
- When the mixture comes to a rapid boil that you cannot stir away, set a timer for 1 minute. 
- Allow to boil for one minute. 
- Remove the saucepan from heat. 
- Stir in vanilla, oats and instant pumpkin pudding until fully combined. 
- Drop the cookie mixture onto the parchment lined work area by the spoonful. 
- Allow the cookies to cool and set for 90 minutes before removing.
