Line your countertop with parchment paper or aluminm foil.
In a medium saucepan combine butter, sugar, and milk.
Bring to a rapid boil over medium high heat, stirring cntinuously.
When the mixture comes to a rapid boil that you cannot stir away, set a timer for 1 minute.
Allow to boil for one minute.
Remove the saucepan from heat.
Stir in vanilla, oats and instant pumpkin pudding until fully combined.
Drop the cookie mixture onto the parchment lined work area by the spoonful.
Allow the cookies to cool and set for 90 minutes before removing.
