Earlier this week I shared the quick cupcakes I made for the Detroit Tigers opening day. In case brownies are more your style, I am sharing the simple recipe for baseball brownie cookies. That’s right. Brownie. Cookies.
You can use any type of brownie mix for these cookies, so I chose the super fun Pillsbury Funfetti brownies. You will also need white candy melts and a food coloring pen. You can find all these things in the baking aisle at Walmart when you stock up on your baking supplies.
While the cookies are in the oven, you can work on the baseball decorations. Simply draw two curved lines on the flat side of each candy melt. BAM! White chocolate baseball decorations! When the cookies come out of the oven, let them cool for about 5 minutes before topping each one with a baseball. You don’t want the chocolate to completely melt away.
These cookies are fabulous. Each cookie has the delicious crunchiness of edge-of-the-pan brownies AND the fudgy texture of middle-of-the-pan brownies. Best of both worlds! Serve these cookies at a baseball birthday party or an end of the season team celebration for some very happy guests.

Baseball Brownie Cookies

- 9 x13 Funfetti brownie mix
- 2 eggs
- 1/4 cup plus 1 T vegetable oil
- 1/4 cup flour
Baseball decorations
- white candy melts
- red food coloring marker
Instructions
- Preheat oven to 375.
- Mix all ingredients in a large bowl.
- Drop 2 T. of batter onto a cookie sheet.
- Bake for 9 minutes.
- Let cookies cool for 2 minutes on cookie sheet before transferring to cooling rack.
- Let cookies cool for 3 more minutes before adding candy melt baseball.
