I love breakfast foods as much as the next person, unless that person is Ron Swanson, but some mornings I want something more sweet than savory. I already turned my very favorite shake ever into a healthy breakfast shake, I thought it might be time to try it with my second favorite. There’s a fast food chain that offers pumpkin pie shakes every fall, and it is something I look forward to all summer. This pumpkin cream cheese breakfast shake replaces the custard with Greek yogurt and TruMoo milk, but keeps the healthy pumpkin puree and tasty fall spices.
The recipe is very simple, but there is one trick to making a thick shake quickly. Pre-freeze the yogurt and pumpkin puree in ice cube trays, and they are perfectly portioned so that you can throw the ingredients into the blender and go! Each ice cube compartment fits about 1 oz, so you can fit the smaller sized can of pure pumpkin in one tray. It might get slightly freezer burned if your trays don’t have plastic lids, but that won’t affect the taste of your delicious shake.
My kids love these shakes for after school snacks, and the shakes taste extra delicious when you snack on a few graham crackers too. Reminds me of a pumpkin pie crust!
I used the vanilla TruMoo Protein Plus milk for my shakes to add some filling protein to the drink. Next time, I am going to try a batch with the chocolate milk because chocolate and pumpkin are meant to be together.
