Breakfast always feels rushed at our house, even on days when I don’t have to get the kids ready for school or church. They want to rush through eating to get to playing or I need to make it to the grocery store before it gets too busy or this or that or…. I would love to serve a full warm breakfast (like we sometimes do for breakfast for dinner), but there doesn’t seem to be time.

I cooked up a few of the super cute confetti pancakes for my kids as a special St. Patty’s Day treat (a day late). They both loved the taste, and I liked seeing them eat a decent breakfast before we had to rush my son off to preschool.
