Each Spring my family gets together with my parents to watch the Detroit Tigers play their season opener. We eat traditional baseball foods and watch as the team gears up for another season. My mom took care of all the dinner food this year, so I decided to mix up some simple team spirit cupcakes in Tigers orange and blue.
When I get my groceries at Walmart, I like to grab a few Pillsbury mixes and frosting just to keep in the pantry. That way, I can make up a quick desert, even on short notice. I decided to make these cupcakes the day of the game, but since I already had the ingredients I was all set to go.
I didn’t want to go overboard on the food coloring, so I just added a small amount of red and orange to the yellow cake batter. I have a muffin pan that holds 24 cupcakes, so I had the whole batch done in 20 minutes. After the cupcakes cooled, I topped them with my standby cream cheese frosting. In my book, it’s cream cheese frosting or nothing. Then we sprinkled them with blue sugar and finished the cupcakes off with some Detroit Tigers candies.
I love being able to make a last-minute decision to share treats with my family without having to stress about whether or not I have enough flour, cocoa, or whatever in the house. I have another simple dessert, this time using brownie mix, coming up soon — so check back later this week!
