When I found out my son had been assigned to bring snack to school around Dr. Seuss’ birthday, I knew I wanted to make a fun Seuss-themed snack and beverage with him in honor of one of our favorite authors. I searched online for snack ideas, but found that most Seuss food recipes were for meal ideas or desserts. There weren’t many recipes in the way of snacks. So, I made one up. It is very easy to make a Dr Seuss snack mix with some Pink Ink to drink!
Start by popping your popcorn. One bag should be enough. I made my four-year-old supervisor of this step. My son loves popcorn, but I think he likes counting down with the microwave even more.
Have you ever had Chow Mein noodles before? They are yummy, not especially good for you, but yummy. One my favorite Seuss books to read to my kids is “Fox in Socks” which ends with the Tweedle Beetle Battle where the battle’s on a poodle and the poodle’s eating noodles.
Mix the “Noodles for Poodle-Eating” into the popcorn.
Heat some margarine, corn syrup, sugar and blue raspberry gelatin on the stove.
Carefully pour the mixture over your popcorn and noodles. Work quickly because the mixture gets sticky FAST.
Using tongs (or your fingers if you are brave), gently toss the snack mix to coat as much of it with the gelatin mixture as you can. Spread it onto a baking sheet lined with foil and bake.
Meanwhile, get your little one working on his sorting skills to find all the “One Fish, Two Fish, Red Goldfish” in the package.
Obviously, using just the red fish is an aesthetic thing. You don’t have to waste time sorting if you don’t want to. But it IS great busy work for a squirrely preschooler!
For an accompanying beverage, we mixed up some of the “Yink’s Pink Ink” (also from “One Fish, Two Fish, Red Fish, Blue Fish”). Just add some strawberry syrup to a half gallon of milk and SHAKE!
We went to Target on Saturday when they had in-store Dr. Seuss book readings. Each of the kids got a fun little goodie bag which included some Lorax stickers. I had the boy decorate the treat baggies with the stickers.
The Dr. Seuss snack is colorful and yummy!
Dr. Seuss Snack Mix
8 c. popped popcorn
1/4 c. margarine
3 T corn syrup
1/2 c. granulated sugar
1 small pkg. Blue Raspberry gelatin
1/2 – 3/4 c. Chow Mein noodles
1 c. goldfish crackers
Preheat oven to 300. Line baking sheet with foil. Pour popcorn onto baking sheet to check for unpopped kernels. Mix together Chow Mein noodles and popcorn.
Cook butter and corn syrup in a small saucepan over low heat. Add sugar and gelatin and stir. Bring to a boil. Reduce heat and simmer for 5 minutes.
Pour the gelatin mixture over the popcorn and noodles. Toss to coat. Bake for 10-15 or until the gelatin looses a bit of its stickiness. Cool. Pour into a large bowl and break into bite-sized pieces. Mix in goldfish crackers and serve.

1/2 gallon of milk
strawberry syrup
Mix and serve!
