The weatherman predicted a hot summer, and, boy, was he right. We have spent some hot and humid summer days at the ballpark watching our kids play, and when I get home hot food is the last thing on my mind. If I have thought ahead, I like to have something cool in the fridge or freezer to give to the kids to help them cool down. These fresh fruit popsicles are the perfect balance between cool treat and healthy snack.
I found my popsicle mold at our grocery store, but you can pick them up just about anywhere. I used my new hand blender to puree my berries, but a blender or food processor would work just as well.
I layered the berries because, well, just because they are prettier that way. You can use this recipe for any berries you have on hand, and you can choose whether you want to layer the flavors or not. What is your favorite way to cool down in the heat?
