When I went to our city’s farmers’ market recently, I bought some zucchini with the intention of making some yummy bread. After a facebook friend recommended this dessert (that she uses to trick her husband and kids into eating their veg – shush!), I changed my plans.
Even if the idea of a vegetable cobbler sounds crazy to you, give it a try. This recipe will change your mind.
Cut and seed the zucchini as much as possible. When making this dessert again, I will cut the zucchini into smaller pieces. If you are trying to fake out veggie-haters, the smaller the better.
Add the sugar, water, lemon, and spices.
Simmer on the stove until the zucchini starts to soften.
Mix together the dry ingredients and butter and sprinkle it over the vegetable mixture.
Bake and enjoy!
If this were topped with some cinnamon whipped cream, it would be heaven.
FARMERS’ MARKET ZUCCHINI COBBLER
FILLING:
5 c. zucchini, peeled, cut and seeded
1/3 c. sugar
1 tsp cinnamon
1/4 c. lemon juice
3/4 c. water
Saute in a saucepan for 10 minutes until zucchini is tender.
Place in a 9×9 ungreased pan.
TOPPING:
6 T. butter
1 c. flour
1/2 c. brown sugar
1 tsp baking powder
1/2 tsp salt
Mix until crumbly and sprinkle over zucchini. Bake at 350 for 45 min.
