As a terminal and adventurous foodie, you might think I grew up with homemade gourmet meals. That couldn’t be further from the truth. My mom didn’t grow up cooking. Most of my childhood meals were in line with the recipes manufacturers developed for Mad Men area moms to cook with food developed for the war. To this day, I freak out when I see carrots and radishes in a Jell-O mold. Fruit and Jell-O I can do but keep my vegetables out of it, thank you!
It’s interesting how food and recipes have changed since 1963. Back then, many recipes were cholesterol bombs that relied on loads of salt and pepper as their only flavoring. In fact, I have one such retro recipe in my recipe box, my grandmother’s hamburger pie.
Hamburger pie is the type of thing Carla may have made for Sally and Bobby when she cared for the kids as Betty scampered off to Nevada to divorce Don.
Here is Grandma’s original hamburger pie recipe:
½ cup light cream
1 cup + 2 Tablespoons of Bisquick
1 lb of ground beef
2 medium onions, chopped
1 teaspoon salt
½ teaspoon pepper
2 eggs, beaten
1 cup small curd cottage cheese
Paprika
My grandmother’s original hamburger pie recipe is yummy but it could use a little help to make it a little less of a cholesterol bomb and a little kick of flavor in the paprika department. I just can’t leave well enough alone I guess.
Ingredients
½ cup skim milk
1 cup + 2 Tablespoons Bisquik (or substitute a mix of one cup of flour, 1½ teaspoons of baking powder, ½ teaspoon of salt, and 1 Tablespoon of melted butter)
1 lb of ground turkey
1 medium onion, chopped
1 teaspoon salt
½ teaspoon pepper
1 cup light cottage cheese
Smoked paprika
Make the crust
1. Stir the skim milk to the biscuit mix with a fork.
2. Grandma said to knead the dough 10 times so that’s what I still do.
3. Roll the dough into a circle.
4. Place the dough in a pie pan.
5. Press the edges with a fork so it looks fancy.
Tip: Dip your fork in water so the dough doesn’t stick to the fork.
Make the filling
1. Brown the ground turkey, onions, salt and pepper together.
2. In a separate bowl, mix the eggs and cottage cheese together.
3. Drain any fat from the turkey mixture.
4. Pour the turkey mixture into the pie shell.
5. Pour the cottage cheese and egg mixture over the meat mixture.
6. Sprinkle with the smoked paprika.
7. Bake for 30 minutes at 375 degrees.
The family gave my version a big thumbs up because the smoked paprika adds taste as well as color.
