Fully coat cut chicken in corn starch.
Put instant pot on sauté setting and pour in sesame oil.
Place chicken pieces in the instant pot and brown on all sides.
In a small bowl, combine soy sauce, brown sugar, sriracha, garlic, salt, pepper, and rice vinegar.
Once chicken is browned, add in the sauce. Toss the chicken in sauce until each piece is completely coated.
Place instant pot onto manual setting and set timer for 6 minutes.
Once timer goes off, do a quick release.
Serve firecracker chicken over rice garnished with sesame seeds.
