Preheat oven to 350 degrees.
Roll out the two sheets of pie dough.
Trim the two crusts to be rectangles that have the same dimensions.
Spread the strawberry jelly on one of the rectangles - leaving a 1-inch border around the perimeter of the rectangle bare.
Lay the other rectangle pie crust on top.
Seal the edges of the crust with a fork.
Bake for 10-12 minutes or into the crust has turned golden brown.
Carefully transfer to a cooling rack and allow it to fully cool.
Frost the pop tart with vanilla frosting.
Decorate with sprinkles.
Use a sharp knife or a pizza cutter to cut the giant pop tart into quarters to serve.
