Place the sliced potatoes into the Instant Pot with 1 cup of water and cook Manual High for 1 minute.
Do a Quick Release of the pressure once the potatoes are done.
Turn on the oven broiler.
Remove the potatoes from the instant pot and put them into the baking dish.
Turn the instant pot onto sauté.
Combine white cheddar, heavy cream, chicken soup, salt & pepper.
Once cheese has melted, pour the mixture over the potatoes.
Sprinkle with cheddar cheese.
Broil in the oven for 3-5 minutes or until cheese has fully melted.
